KIDNEY-FRIENDLY Chicken & Broccoli Bowl
Ingredients:

1 tbsp olive oil, salad or cooking

12 oz chicken breast, boneless, raw, broiler/fryer, met only

1 cup broccoli flower clusters, raw, florets
-
3 tbsp toasted onion
-
6 fl oz water, municipal
-
1/4 cup vinegar, balsamic
Instructions:

In a 12-inch non-stick skillet, heat oil over medium-high heat and brown chicken. Remove chicken and set aside.

Blend toasted onion with water and vinegar. In the same skillet, add broccoli and toasted onion mixture. Bring to a boil over high heat.
- Return chicken to skillet. Reduce heat to low, cover, and simmer for 10 minutes or until chicken is thoroughly cooked. Serve, if desired, over hot cooked rice.

KIDNEY-FRIENDLY BBQ Chicken Pizza
Ingredients:

2 pita bread, 6 ½” size

3 tablespoons low-sodium barbecue sauce
-
¼ cup purple onion
-
2 tablespoons crumbled feta cheese
-
4 oz chicken, cooked
-
1/8 teaspoon garlic powder
NOTE: If you have kidney disease, use feta cheese sparingly due to phosphorous.
Instructions:

Preheat oven to 350 ° F.

Spray the baking sheet with nonstick cooking spray and place 2 pitas on the sheet.

Spread 1 ½ tablespoon BBQ sauce on each pita.

Chop onion and spread over pitas.

Cube Chicken and spread over pitas.

Sprinkle feta cheese and garlic powder over pitas.

Bake for 11-13 minutes.

KIDNEY-FRIENDLY Beef Stir-Fry
Ingredients:

2 tablespoons cornstarch
-
¼ teaspoon sesame oil
-
½ teaspoon sugar
-
2 tablespoons water, separated
-
1 large egg, beaten
-
3 Tablespoons canola oil, separated
-
12 ounces beef round tip, sliced
-
1 green bell pepper, sliced
-
1 cup onions, sliced
-
¼ teaspoon ground red chili pepper (or to taste)
-
1 tablespoon sherry
-
2 teaspoons soy sauce, reduced sodium
-
Optional garnish: parsley
Instructions:

In a large bowl, whisk 1 tablespoon cornstarch, 1 tablespoon water, 1 large egg, 1 tablespoon canola oil, and add the beef. Marinate for 20 minutes.

In a separate bowl, combine the rest of the cornstarch and water. Set aside.

Heat 2 tablespoons of canola oil in a skillet and add the meat mixture. Cook until the meat begins to brown.

Add green bell peppers, onion, and chili pepper. Add sherry, and then stir-fry it all for 1 minute. Add soy sauce, sugar, and sesame oil.

Thicken with cornstarch and water mixture to your liking.

KIDNEY-FRIENDLY Honey Salmon
Ingredients:

3 tablespoons honey

¾ teaspoon grated lemon peel
-
½ teaspoon ground black pepper
-
½ teaspoon garlic powder
-
1 teaspoon hot water
-
16 oz of salmon fillets
-
2 tablespoons olive oil
-
3 cups arugula
Instructions:

Place honey, grated lemon peel, ground black pepper, garlic power, and hot water in a small bowl and whisk until blended. Rub mixture over salmon fillets.

Heat olive oil in a skillet over medium heat. Add spice-rubbed salmon fillets and cook for 2 minutes on each side.

Reduce heat to medium-low and cook an additional 4 to 6 minutes, until fish turns opaque throughout and flakes easily when tested with a fork.

Arrange 1/2 cup arugula on each plate. Place salmon fillet on top of arugula and serve.
